tacos de chorizo

Growing up in New York City filled with multicultural foods, I’m glad my mother never stopped cooking traditional Mexican cuisine at home. Fresh spicy chorizo is my top favorite meat to eat along with a finger licking, nose running green salsa. Cooking can sometimes be time-consuming, we all have days when you want to prep and cook a meal in less than 30 minutes. Tacos are always a good option, it’s a quick meal and tacos de chorizo gives a different flavor than an ordinary chicken or steak taco.

The recipe is easy to follow and the toppings are optional. Enjoy..

1 or 2 pounds fresh spicy chorizo ( the tacos will still taste great even if you don’t have fresh chorizo, I used packaged for these tacos)
1 pack of tortillas
1 1/2 cup of fresh cilantro (chopped)
1 whole white onion (chopped)
Lemon wedges
minced tomato (optional)

1.Over medium heat pre-heat large size pan, meanwhile remove the casing of the chorizo. Add chorizo to pan, with any large spoon start to break it apart so it can completely cook (it turns into a dark color when it’s almost ready). Chorizo will release excess oil so don’t add any oil to the pan. Depending how crisp you want your meat you can cook it for 15-20 minutes. Once cooked make sure to drain the oil.

2. Warm tortillas in a large skillet pan over medium heat, add some oil to give them more flavor.

3.Layer two tortillas on a plate add the chorizo and the rest of the toppings,onion, cilantro, minced tomato. Don’t forget your salsa! Finally sprinkle some lemon wedges on your tacos.

Tuesday’s dinner meal is ready in less than 30 minutes! The amount of toppings you can add to your tacos are several, we love adding avocado and sour cream to ours. Thanks for stopping by!
