Mexican tostadas always make me happy. For one, it reminds me of my mom’s cooking. I’ve mentioned before (read here), my mother didn’t always have the time to cook meals that were time-consuming. Her plates were always simple and full of flavor. Another reason is they’re so easy to make and everyone in my household loves them. I feel as if I’m always complaining about cooking, but I know I’m not alone, right? Cooking can become tiring, but making dishes like this one (which can also be used as appetizers) makes dinner time a little less dreadful and more exciting.

Ingredients For 10 Tostadas
- 10 corn tortillas
- 2 cups of Mexican Cheese crumbled
- 2 1/2 cups of romaine lettuce finely minced
- 3 avocados cut into thin slices
- Mexican Cream
- 1 small can of Jalapeños (optional)
Prep Time: 20 Minutes or less
It is best you prepare toppings before you begin to deep-fry your corn tortillas.
Directions: In a deep skillet over medium high-heat, add vegetable oil (enough to cover the tortilla) and let the oil get warm for 5-8 minutes. Afterwards start frying the tortilla. The tortilla is ready once it starts to turn brown and crispy (see pic above).
Next, take each fried tortilla and place it on a napkin to dry, once it cools down add the toppings in order: Mexican Cream, lettuce,( a lot) of cheese, avocado and jalapeños.
Note: Tostadas can also be topped with, shredded chicken, shredded steak or any meat you want to add. You can also use refried beans before adding the Mexican cream. A green or red salsa instead of the jalapeños can also be used. Personal preference, I always say!
