Recipe-Penne Sauce w/Chicken

If you have kids weekdays are filled with non-stop duties, if you work long hours the least you want to worry about is what’s for dinner tonight? 

Recipes are always exciting to share! We all can use a little help when it comes to dinner meals the family will enjoy. I am all about effortless-meals here on the blog, so here is a recipe I’ve mastered thanks to my sister-in-law!Penne Sauce w/chicken

TIP: Season the meat a day ahead-adds flavor and saves you time.


your choice of seasoning

one box of Penne Rigate noodles (your choice of brand)

five or six large pieces of chicken cutlets (serves 5)

one small cartoon of heavy cream

 Large can of tomato sauce

half of an onion & two garlic cloves

Made in 30 minutes or less

1. In a large pot, bring water to boil over high heat, make sure pot is half way full-add a pinch of salt & one tablespoon of oil. Cook noodles for about 7-8 minutes (depends how tender you like it) drain the pasta once it is done

TIP: You should always pre-heat your pots & pans you are using. Depending on how many people you are cooking for is the amount of pasta you use.

2. Use a small pot like the one below to prepare the Vodka sauce in. I don’t measure how much oil I put, for your reference just add enough oil to cover the onions and garlic

3. over medium heat let the oil simmer for few minutes before putting in the garlic & onions, cut the garlic & onion into finely pieces Vodka Penne-Cut Onions

4. sauté for a few minutes as you see above, then add the tomato sauce & heavy cream, mix it all together and bring to boil

5. while the sauce is cooking, start to cook your pre-seasoned chicken cutlets (cook with oil or cooking spray)Penne:Chicken

6.once the chicken is cooked-cut into square pieces Penne V-Chicken

Add the sauce on top of the noodles and meat creating your Monday night dinner. I guaranteed it will have your whole family asking for seconds!

In the first recipe I shared on the blog read it hereI mentioned everything is personal preference. If you are not of fan of meat, you can still enjoy this delicious meal by simply not adding any meat.
